Venison Chili
Venison, course ground 2lbs
Oil 2T
Ingredients:
Onion, diced 1c
Garlic, minced 2T
Red peppers, diced 1c
Green peppers, diced 1c
Chili powder 2T
Ground cumin 1T
Paprika 2 tsp.
Dry oregano 1 tsp.
Cayenne pepper 1/2 tsp.
Crushed tomatoes 1 pt
Brown sugar 2T
Brown sauce 1 pt
Salt to taste
Fresh cracked black pepper 1/2 tsp.
In a large pot,
caramelize the meat. Add onions, garlic and peppers, then sauté. Mix spices
and add to the mixture. After stirring, add tomatoes, brown sugar, and brown sauce.
Simmer for 1 hour. Serve and garnish with sour cream and grated cheddar
cheese.
