Cajun Spice Blend


Salt, 4 T

Sugar, 2 T

Thyme, ground, 2 tsp

Onion powder, 1 T

Paprika, ½ C

Cayenne pepper, 2 T

White pepper, 1 tsp

Coriander, ground, 2 tsp

Oregano, ground, 2 tsp

Fennel seed, 2 tsp

Cumin, ground 1 tsp


Combine all spices, rub meat with oil, and then cover with spice blend. For tough cuts, let cure for 24 hours. For grilling tender cuts, rub meat with oil, dredge in spices and grill.
